- 2 C flour
- 2 tsp. baking soda
- 1 tsp. ground cinnamon
- 1 tsp. ground ginger
- 1/2 tsp. ground cloves
- 1/4 tsp. salt
- 3/4 C vegetable shortening
- 1 C packed light brown sugar
- 1 large egg, lightly beaten
- 1/4 C molasses
- Granulated sugar for dipping dough
Sift together flour, baking soda, cinnamon, ginger, cloves, and salt into a bowl. Beat together shortening and brown sugar in a large bowl until fluffy. Add egg and molasses until just combined. Add flour mixture in 2 or 3 batches, blending well. Refrigerate dough, covered, until firm, at least 1 hour.
Heat oven to 375. Roll level tablespoons of dough balls, dip one side into sugar and arrange on cookie sheets. Bake 10-12 min, until puffed and cracked on top.
