Orange Bread

  • 2 C sifted flour 
  • 1 tsp. baking powder  
  • 1/2 tsp. baking soda   
  • 1/2 tsp. salt 
  • 2 Tbsp. butter  
  • 1 C sugar
  • 1 egg
  • 1/4  C  orange juice (1 orange?)
  • 2 Tbsp. orange peel (3 oranges?)
  • 3/4 C hot water             

1) Mix dry ingredients.  Cream butter and sugar.  Add egg.
2) Combine water and juice.  Add flour and liquid mixtures to sugar mixture, alternating liquid and flour, beginning and ending with flour mixture.  Add orange rind.  Bake for 50-60 min. at 350 in buttered and floured 9 x 5 loaf pan.

1 recipe = 3 mini loafs.  Bake mini loaf at about 25 minutes.
