Pancakes

  • 1 1/2 C flour
  • 1/2 Tbsp. baking powder
  • 1/2 tsp. baking soda
  • 3/4 tsp. salt
  • 2-3 Tbsp. sugar
  • 2 egg yolks
  • 1 1/2 C buttermilk (add 3 tsp. –3 Tbsp. vinegar to 1 1/2 C milk)
  • 3 Tbsp. oil
  • 2 egg whites, beaten

Combine in order given, folding in the beaten egg whites and bake.

Optional add ons:

  • Honeycomb butter:  chop 1/2 cup honeycomb candy and mix with 1 stick butter, 1/4 tsp salt, 1 tbsp honey in food processor until smooth.
  • 1 C chopped toasted pecans
