Evelyn’s Jennylyns

  • 2 eggs
  • 1 C flour
  • 1 1/2 C milk
  • 1 Tbsp oil
  • 1/4 tsp salt

Beat eggs until light and frothy.  Add half the milk and half the flour to the eggs.  Mix.  Alternately add remaining flour and milk, mixing well.  Mix in oil and salt.  Cook 1/3 C batter in pan at medium heat.
