Flat Bread

1 package active yeast
1/2 teaspoon sugar
1 3/4 cup all-purpose flour
1 teaspoon coarse salt
1 tablespoon fresh thyme leaves (optional — can use other herbs if you prefer)
3/4 cup very warm water (might need more)
1 teaspoon oil

Mix 1/2 the flour, all the sugar, yeast and salt in a bowl, herbs if you are going to use them (Wyle likes it plain, we did it with dill and garlic and Matt liked it)

mix in the warm water and oil, add flour as needed to make a nice dough
 
Let rise 5-10 minutes,  then break into pieces, the recipe said 20 pieces but we think 8-12 was more realistic…. and roll out into a fatish tortilla… I guess you could do super thin to be more cracker like, but we liked it to have a little chew to it…
 
Cook in a dry fry pan, we used our cast iron skillets and had two pans going at once, let it bubble, it takes 1-2 minutes per side.
