- 1 1/4 tsp. salt
- 1 lb (3 1/2 C) frozen baby lima beans, not thawed
- 2 Tbsp. unsalted butter
- 1 1/2 tsp. minced garlic
- 1/3 C whole milk, or to taste
- 1/4 tsp. freshly grated nutmeg, or to taste
- 1/4 tsp. freshly ground black pepper
Bring 2 C water and 3/4 tsp. salt to a boil in a saucepan. Add lima beans and bring rapidly to a boil again, then reduce heat, cover, and simmer until beans are tender (10-12 min).
Meanwhile, melt butter in a small saucepan over moderately low heat. Add garlic and cook, stirring until pale golden (about 2 min). Remove from heat.
Drain beans and transfer to a food processor. Add garlic mixture, milk, nutmeg, pepper, and remaining 1/2 tsp. salt. Puree until smooth.
