- 2 acorn squashes
- 5 Tbsp olive oil, divided
- Salt and pepper
maybe double this part:
- 1/2 large onion, diced
- 1 celery stalk, diced
- 1 lb ground sausage
- 1 large apple, diced
- 1 C rice cooked
- 1/2 Tbsp pumpkin spice
Preheat oven to 350. Slice squash in half. Remove Seeds. Spread 4 Tbsp olive oil on a cookie sheet. Season squash with salt and pepper and lay cut side down on cookie sheet. Cook for 30-45 minutes, until tender.
Make Stuffing:
Dice half of a large onion and celery stalk. Cook in 1 tbsp olive oil until translucent. Add 1 lb ground sausage and brown. Add apple. Add cooked rice to mixture. Season with pumpkin spice and salt and pepper to taste.
After your squash is finished roasting, it is time to stuff it! Fill the centers with your stuffing mix. Place back into your oven and roast for an additional 10-15 minutes so that the flavors meld together.
