Potato Rolls

Makes roughly 38 rolls

  • 1 cup potato water
  • 2 ½ teaspoons salt
  • 1 cup mashed potatoes
  • 1/4 cup sugar
  • 1 cup milk
  • 2 eggs
  • 2/3 cup butter
  • 6 cups flour
  • 1 tablespoon yeast

Boil 1 medium potato in 1 ½ cups water with ½ teaspoon salt, when tender, drain, save water.  Mash potato.  Measure 1 cup potato water in pan, add mashed potato, margarine.  Warm till butter is melted.  Add milk.  Pour warm liquids over salt, sugar in mixing bowl. When lukewarm add yeast, mix well.  Add beaten eggs.  Then gradually add flour.  Mix and knead to a smooth soft dough (dough will be really sticky but get less sticky when rising.  Also, be careful not to over knead–10 min is too much.  Does not need to be worked like bread).  Put in greased bowl, turn to grease top.  Let rise til double in bulk (about an hour?).  Roll out on floured board to about ½ inch thick, cut with round 3″ cutter (or lid).  Brush with melted butter, fold in half, butter tops (I think one recipe uses just shy of a half a stick). Place close in greased pan.  Bake in hot oven (400 degrees) until golden brown.

400 degrees, 15 to 25 minutes.
