Peda Bread

  • 2 Tbsp yeast
  • 1/2 C warm water
  • 1 3/4 C milk (warm)
  • 3 1/2 Tbsp sugar
  • 2 tsp salt
  • 6 C flour
  • 3 Tbsp olive oil
  • Fresh or dried herbs of choice (sage, rosemary, thyme, etc.)

Blend liquids, sugar, oil, and 1/2 of flour.  Mix until smooth.  Add yeast, remaining flour and salt.  Knead well. 

Let rest 10 minutes.  Add herbs before shaping. 

Divide dough in half.  Pinch off a small ball for center, 1 per loaf (gold ball size).  Form a large bagel shape and place ball in center. 

Let bread rise appropriately.  Brush with beaten egg and water.  Decorate top with your choice of: thin red onion slices, poppy seeds, sesame seeds, crumbled sage, rosemary, parmesan, feta cheese, etc…Kosher salt and herbs are a favorite combination. 

Bake 325 for 35 minutes or until golden.
