- 8 slices of bacon, in 1/2 in pieces
- 3 Tbsp olive oil
- 1 onion finely chopped
- 3 cloves of garlic
- 1 can 16 oz tomatoes
- 4 stalks celery
- 2 carrots
- 1/2 a head of cabbage finely chopped
- 2 C of fresh frozen green beans
- 1 Tbsp parsley
- 1 tsp basil
- 2 cans bean and bacon soup
- 1 can beef broth
Fry bacon. Add olive oil, onions, and garlic. Save juice from the tomatoes, add allt he vegetables and tomatoes to the bacon mix. Add spices. Simmer for 15-20 minutes. Add remaining ingredients. Serves 8.
