- 1 C flou
- 3/4 C stone-ground cornmeal (not coarse)
- 1/4 C sugar
- 3 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1 1/4 C well-shaken buttermilk
- 3 Tbsp butter, melted
- 1 C fresh or frozen blueberries
Whisk together flour, cornmeal, sugar, baking powder, baking soda, and salt in a large bowl. Whisk together eggs, buttermilk, and butter in a bowl until combined. Whisk into flour mixture until just combined. Fold in berries (batter will be lumpy and will thicken as it stands).
Brush a 12 in nonstick griddle or skillet with oil and heat over moderate heat. Cook in 1/4 cup batches of batter on griddle.
