- 1/2 C sugar
- 1 Tbsp light corn syrup
- 2 Tbsp water
- 1 tsp honey
- 1/8 tsp baking soda
Combine sugar, corn syrup, water, and 1 tsp honey in a 2-3 quart heavy saucepan, cover and bring to a boil over moderate heat, stirring occasionally until sugar is dissolved. Increase heat to moderately high and boil, uncovered, swirling pan occasionally until mixture turns deep golden (I wrote these notes but maybe they aren’t applicable: amber colored is hard crack. Less than 300 degrees as this makes a hard candy). Remove from heat and immediately stir in baking soda (mixture will foam up and look creamy). Pour onto a large sheet of foil and cool completely.
