- 1/3 C soy sauce
- 2 Tbsp fresh lime juice
- 2 Tbsp chopped garlic
- 2 tsp ground cumin
- 1 tsp sweet paprika
- 1/2 tsp dried oregano, crumbled
- 1/2 tsp ground pepper
- 1 Tbsp vegetable oil
- 1 (3 1/2 lb) chicken, rinsed patted dry and quartered (I just did chicken thighs)
Accompaniment: lime wedges
Marinate the chicken: blend soy sauce, lime juice, garlic, cumin, paprika, oregano, pepper and oil in a blender until smooth
Put chicken in large sealable bag and add mixture. Marinate at least 8 hours up to 24 hours.
Discard marinade and grill.
