Lemon Bars

  • 1 C butter
  • 1/2 C plus 1 1/2 Tbsp. powdered sugar
  • 2 1/4 C flour
  • 4 large eggs
  • 2 C sugar
  • few grains of salt
  • 5 tsp. grated lemon peel
  • 6 Tbsp. fresh lemon juice

Grease and flour 9X13. Beat butter until creamy. Add powdered sugar and 2 C flour. Press dough in pan. Bake 15-20 min. at 350.

Beat eggs in a bowl. Beat in sugar and salt and add lemon peel and juice. Sift 1/4 C flour over egg mixture and stir in. Pour onto baked crust and bake 30 min. until set with thin brown crust. Remove from oven and run knife around edge. Sift powdered sugar over top. Store in fridge.
