Aunt Bev’s Cream Pie

  • 3/4 C sugar
  • 1/4 C cornstarch (firmly packed)
  • 2 1/2 C milk (2 %)
  • 1/2 tsp. salt
  • 3 egg yolks, slightly beaten
  • 1 Tbsp. butter
  • 1 tsp. vanilla

In medium saucepan combine sugar, cornstarch and salt. Gradually stir in milk. Cook on medium heat until comes to a boil. Cook for one minute stirring constantly. Remove from heat. Stir 1/2 of the hot mixture into the egg. Add egg mixture to saucepan. Bring back to boil and boil one minute, stirring constantly. Remove from heat and stir in butter and vanilla.

Yield: 1 9 inch pie
