Spinach and Orange Salad

  • 2 Oranges, peeled and segmented
  • 5-6 C baby spinach
  • 2 Tbsp finely snipped fresh chives (optional)

Dressing:

  • 1 1/2 Tbsp white wine vinegar
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • Several grinds of pepper
  • 1/4 C olive oil
