- 1 C flour
- 1 ½ tsp baking powder
- ⅛ tsp salt
- 5 Tbsp butter, softened
- ½ C sugar
- 1 large egg
- Finely grated zest of 1 orange
- ½ tsp vanilla extract
- ½ C whole milk
- ½ C mini semisweet chocolate chips
Frosting
- ¾ C mini semisweet chocolate chips
- ¼ C heavy cream
- Preheat oven to 350
Sift together flour, baking powder, and salt into a bowl
Beat together butter and sugar until pale and fluffy, about 3 minutes. Beat in egg, zest and vanilla. Reduce speed to low and add flour mixture and milk alternately in 3 batches, beginning and ending with flour mixture, and beating just until incorporated. Fold in chips.
Divide batter among lined muffin cups (use cups because they stick). Bake until pale golden and wooden pick comes out clean, 20-25 minutes. Cool completely then frost.
Frosting: Bring cream to simmer in saucepan. Pour over chocolate and blend.
