- 6 Tbsp finely chopped white onion
- 2 serrano chiles, seeded and finely chopped(I use about a fourth of one)
- 1 clove garlic, minced (optional)
- 2 ripe avocados, halved, pitted, and peeled
- 1 large, ripe tomato, finely chopped
- ΒΌ C lightly packed fresh cilantro leaves, finely chopped
- 1 Tbsp fresh lime juice
- Sea salt
Mash 4 Tbsp of the onion, the chiles, and the garlic with a pestle or fork to form a coarse paste. Add the avocado and mash until well incorporated. Stir in all but 2 tablespoons of the tomato and all of the cilantro and lime juice. Season to taste with sea salt. Sprinkle the guacamole with remaining onion and tomato.
