Caramel Popcorn

  • 1 C butter
  • 2 C brown sugar
  • ½ C corn syrup (maybe use dark)
  • 1 tsp salt
  • (1/8 tsp cream of tartar)
  • ½ tsp baking soda
  • 1 tsp vanilla
  • 5 quarts popped popcorn (½-1 C unpopped)

Preheat oven to 250.  Place popcorn in a very large bowl.

In medium saucepan over medium heat, melt butter.  Stir in brown sugar, corn syrup, and salt and cream of tartar.  Bring to boil, stirring constantly.  Boil without stirring for 4 minutes (until about 250 degrees).  Remove from heat and stir in soda and vanilla.  Pour in thin stream over popcorn, stirring to coat.  Place in 2 large shallow baking dishes and bake in oven, stirring every 15 minutes for one hour.  Remove from oven and let cool before breaking into pieces.
