My Mom’s Chicken

Chicken breasts        Zucchini, sliced

Flour                          Mushrooms, sliced

Salt                            1 can Italian stewed tomatoes

Pepper                       Parmesan cheese (or asiago)

Basil                           Butter

Combine flour, salt, pepper, and basil in a bowl. Dip chicken breasts in flour mixture.

Melt butter in a saucepan and brown chicken over medium heat. Add     zucchini and mushrooms. Once chicken is cooked, add tomatoes.     Cover with cheese, and cover until cheese is melted and tomatoes are warm.
