- 1 C cornmeal
- 2 C flour
- 1 1/2 C sugar
- 1 Tbsp. baking powder
- 4 eggs (separated)
- 1/2 tsp. salt
- 3/4 C melted butter
- 1 C evaporated milk
- 1 tsp. vanilla
- 1/2 C butter
Combine dry ingredients. In another bowl combine melted butter, evaporated milk, vanilla, and egg yolks. Pour into dry ingredients, mix.
Beat egg whites until stiff. Carefully fold into butter. Pour into greased and floured 8 in. cake pan or a 9 x 13 pan. Bake 30 min. at 350. Remove from oven and immediately melt 1/2 C. butter and pour over top.
